Key Functions of Phosphate Blends

Water retention

Binds free water inside the product matrix, so pack weight and cooking yield hold up through the process and through distribution.

Emulsification

Stabilises the protein and fat phases so an emulsified product stays homogeneous during processing and keeps its texture in the finished pack.

Texture and firmness

Builds the structure of a comminuted or emulsified product, which keeps it firm and sliceable instead of slack and watery after cooking.

pH and ionic strength control

Raises the pH of the matrix and increases ionic strength, which is the chemical basis of the binding effect and of colour development in cured products.

Shelf life

The phosphate fraction slows the growth of spoilage organisms in the finished product, which supports shelf life in cooked and ready-to-eat meat.

Consistent batch performance

A blend with a fixed phosphate content, pH and solubility profile behaves the same way from batch to batch, which is what a production line needs to keep a recipe on target.

FAQs of Preservative Blends

What are phosphate blends?

Phosphate blends are mixes of food grade sodium and potassium polyphosphates, sometimes with sodium carbonate, mixed to a defined ratio. They are specified on phosphate content, pH and solubility, and they bind water and fat, stabilise emulsions and control texture in processed food.

A viscous binder builds structure in a comminuted or emulsified product and is dosed into the meat in the cutter. A non-viscous grade disperses and dissolves readily in brine for injection, tumbling or marinade. The wrong one shows up as a slack paste or a cloudy brine.

P2O5 is the total phosphate content, so it tells you how much phosphate a given weight of product delivers. The pH of a 1% solution tells you how alkaline the blend is, and that decides where a firmer matrix or a more neutral product is needed.

For a viscous binder in meat the working range is 0.3-0.5% of the meat weight, which is 3-5 g per kg, dispersed at the beginning of the cutter run. In the wet process it is dissolved in the brine or marinade. The final level is confirmed on the actual meat base.

Yes. The blends are specified for good solubilisation in the presence of salt and do not cake in cold brine, but where salt is part of the same mix the blend should be dissolved completely before the salt is added. With curing salts, note that the blend raises the pH of the matrix.

Sausages, comminuted meat and meat emulsions need a viscous binder. Brines, injections, marinades and tumbling need a non-viscous grade that dissolves in cold brine. Processed cheese needs an emulsifying salt selected for the melt and firmness target.

In the EU, phosphates in meat preparations are limited and the level is expressed as P2O5, so it is the calculated phosphate content of the finished product that has to stay within the limit. Other markets set their own limits, so check the maximum for your product category.

The blends are supplied in 25 kg kraft paper bags with a PE inner liner and in 1,000 kg big bags for full container shipments, stored dry and cool with a 24 month shelf life. With every order we can issue the certificate of analysis, the Halal and Kosher certificates and the shipping paperwork.
